Chicken Nibbles with Jasmine rice and Bok ChoyChicken Nibbles served with Jasmine Rice and Bok Choy
Chicken nibbles 1.2 kgs $10.65 garlic 12 cloves @ .29 $ 3.48 Sesame Oil 2 tblsp $ .76 Ginger n/a 45 ml Sweet Chili Sauce $ .22 Soy Sauce 1/4 or 63 ml $ 1.26 Honey 4tblp (60 grams) $ .78 In a large baking tray, chuck in chicken nibbles, and crush all the garlic on top, drizzle over sesame oil and toss to coat. Bake in oven (at about 150) until brown add soy sauce and sweet chili sauce and return to oven for 10-15 minutes. Add honey and toss, return to oven for a further 10-15 minutes until sauce has thickened. Jasmine Rice 600 grams $ 1.79 Bok Choy 1 pk (4 stocks) $ .89 Garlic 2 cloves sliced $ .58 Ginger, fresh finely sliced 2 cm n/a 1 tblsp sesame oil $ .38 In a non stick fry pan place sesame oil, thinly sliced garlic and ginger. Cut each bok choy stock in half down to the base and place cut side down on the fry pan, on top of oil, garlic and ginger. Fry over medium heat until just brown, do not turn, add a bit of water to pan and cover with a lid for 5 minutes. Serve with rice and chicken. Notes:Well I learned a few things while pricing this dish - I use kikkoman soy sauce which is TRIPLE the price of other soy sauces... guess what I'll be buying next time? Also, Garlic bought in the big bags at the grocery store work out cheaper that buying individual heads, so in reality the garlic portion of this dish should be much less. AND I LOVE sesame oil, but I won't use it on the chicken next time, maybe sprinkling sesame seeds over the finished dish will give a similar taste balance, but sesame oil is expensive too! Good thing there was leftovers...
