Mix first list of ingredients together in a a large roasting pan and place in the oven - leave for 15 minutes to heat through. Meanwhile, in a small pot, mix the brown sugar, syrup, juice and grated rind of one juicy orange and the cinnamon. Heat on high until sugar is dissolved and it starts to froth in the pot. Remove from the heat and drizzle over the hot meusli. Stir through ensuring even coating. Return to oven for another 15 min. Stir, making sure you incorporate the edges into the middle. Give it another 15 minutes in the oven. Remove, stir and cool completely before adding the diced apricots and store in an airtight container. NotesWhat a way to start the day! If you like muesli - and even if you don't it's worth trying to make a habit of it - full of really great healthy stuff to get you going! There are so many interpretations and ways to create your own flavor favorites - We love the almonds and apricots, but you could easily put raisins, dried cranberries, dates, whatever takes your fancy - or leave out the dried fruit. Change the type of nuts, or instead of cinnamon, grate some nutmeg and alternate golden syrup for maple. Skies the limit. You can also add linseed, be we like it in the LSA - apparently it needs to be ground to provide the most health benefits. I also cheat on the apricots (I don't like chopping sticky dried fruit) so I buy them already diced.
