Mackenzie's Sticky Scones*Scone Batter:
2 cups flour .25 3 tsp baking powder .15 1 tblsp sugar .025 1/2 cup butter .75 1 tsp salt NEG 1 cup milk (250 ml) .37 Preheat oven to 200. Mix dry ingredients and place into food processor if you have one. Add cubed cold butter and blitz into crumbs - if you don't have a food processor, either use your hands and rub the butter in, or use two kitchen knives and cut it it (or pastry cutter, you get it right?) Before adding the milk... mix up the sticky stuff: Sticky stuff: 1/3 cup butter .67 1/3 (75 gr) cup brown sugar .21 1/3 cup pecans 2.49 Melt the butter, add brown sugar and pecans and stir. Place equal amounts in the bottom of muffin tin (makes 12). Set aside. now add 1 cup milk to your premade scone crumbs. Stir well and drop large spoonfuls in equal amount on top of your sticky stuff in the muffin trays. Bake for 10 minutes (or until the batter is light brown. Place a clean tray on top of the muffins, and turn upside down, wait a minute, then pull the muffin tray off the scones. Total cost per batch of 12: $4.92 Total cost per scone: 41 cents Having your son tell you him loves them..... priceless! |
Notes:I was thinking these might be really quite expensive with the amount of butter, but was pleasantly surprised to see the actual price - and HALF that cost is in the pecans! So, worth trying to get them on special, or try a different kind of nuts (although checking online at the time of writing, most of the nuts are the same price) I am looking forward to trying these with our free macadamia nuts when they are ready to eat!
* They are called Mackenzie's Sticky Scones as I adapted this recipe and he has been the most vocal about liking them! I will make these a couple of time per week, and he reheats them and says they are just as good. They are a cross between a New Zealand Scone, and a Canadian baking powder biscuit... |
